It is about the size of a small grape and is considered 'ripe' when it has dried on the bush and resembles a raisin.
Bush Tomatoes, or dessert raisins, have a strong sundried tomato flavour and a suggestion of tamarillo and caramel. This fruit is delicious in a broad range of recipes. Perfect in dishes with salmon, kangaroo and chicken.

Rehydrate for Sauces: Soak whole tomatoes in warm water for 15-20 minutes before adding to dishes to soften them.
Grind into Spice: Grind the dried berries into a powder (often called akudjura) to create a paste with oil for marinades or to stir into gravies, soups, and stews for extra depth.
Slow Cooking: Add directly into slow-cooked casseroles, curries, or pot roasts. As they simmer, they provide a strong sundried tomato flavour.
Pairings: They work exceptionally well with kangaroo, chicken, salmon, and vegetable dishes.
Quantity Guide: Due to their strong flavour, use sparingly. A general guide is 1–2 teaspoons in a dish for a rich, savoury boost, rather than using them as a primary bulk ingredient.
